This tasty candy can sit on the counter for an easy grab, or in the refrigerator for a longer lasting and satisfying treat. With so few ingredients, a short amount of prep time to put these together, you will be ready to enjoy these in less than an hour!

How to make chocolate billionaires

What You’ll Need

To make chocolate billionaires, you only need 5 ingredients (plus water). This recipe will yield about 36 candies.

Ingredients:
  • 2 cups Caramel bits
  • 1- 23 ounce package of milk chocolate or semisweet chocolate chips
  • 1 tsp coconut oil or vegetable shortening
  • 3 tablespoons water
  • 1 cup Rice Krispies cereal
  • 1 ½ cups toasted and chopped Pecans

The Making of a (Chocolate) Billionaire

Directions:
  • Prepare two large baking sheets by covering the bottoms with wax paper or parchment paper
  • Place the caramel bits and water in a small microwave-safe container
  • Melt caramels by microwaving for 30 second intervals, stirring after each time until the caramels are melted and smooth
  • Add the pecans and Rice Krispie cereal to the caramel and stir to combine
  • In a second microwave safe bowl, place the chocolate chips and the coconut oil or vegetable shortening. 
  • Melt chocolate chips by microwaving on sets of 30 seconds each, stirring until the chocolate is melted and smooth
  • Using a small cookie scoop or two spoons, portion the caramel mixture into teaspoons
  • Dip candy into the melted chocolate (be sure to coat the bottoms of the caramel with chocolate also)
  • Refrigerate the trays with the chocolate pieces until the chocolate is set
  • Store in an airtight container, placing wax paper between the layers

How do I store these?

These sweet bites of deliciousness can be left on the counter at room temperature for up to 4 days or stored in the refrigerator for up to 7 days. I will warn you though, mine will never make it past a couple of days!

Could I leave out the pecans?

I realize that there are some people who do not like the taste of pecans. You could certainly leave them out, but be warned that they are part of what holds the candy together. 

Could I substitute Walnuts?

Definitely can make this switch if the walnuts make you happier. 

Can I freeze this candy?

I have never been a fan of freezing chocolate, but it can be done. Be sure to wrap them tightly and store them in a freezer safe container. They can remain in the freezer for up to 3 months. Keep in mind that chocolate may end up with some discoloration after freezing.

Total Time: 45 minutes

Ingredients

  • 2 cups caramel bits
  • 3 tablespoons water
  • 1 (23 ounce) package milk chocolate chips
  • 1 teaspoon coconut oil or vegetable shortening
  • 1 ½ cups chopped toasted pecans
  • 1 cup Rice Krispies cereal

Instructions

  1. Prepare two large baking sheets with waxed paper.
  2. In a microwave-safe bowl, place the caramel and water. Microwave on high for 1 minute. Stir well and return it to the microwave, stirring after every 30 seconds, until smooth.
  3. In a separate bowl, add the chocolate and coconut oil. Cook in the microwave on high for 1 minute. Stir vigorously to help the chocolate continue melting from the residual heat. Return it to the microwave, stirring after every 15 seconds, until smooth. Set aside.
  4. Add the pecans and cereal to the caramel. Stir to evenly combine.
  5. Using a small cookie scoop or two spoons, portion the caramel mixture into teaspoons. 
  6. Spoon the chocolate over the candies, making sure to coat the bottoms. Place the chocolates on the prepared baking sheets.
  7. Refrigerate until the chocolate is set. Store in an airtight container between sheets of waxed paper.
