I’m a huge fan of mint-flavored anything. For me, it’s peppermint mochas year-round, Andes mints stashed in my desk drawer, thin mints, and mint chip ice cream. Aside from the mix, you most likely have all these simple ingredients on hand. This recipe will take you just 20 minutes to make, and yield about 23 chewy cookies.

  • 1 pouch (1 lb. 1.5 ounces) Betty Crocker sugar cookie mix
  • 1/2 cup unsalted butter softened
  • 1/4 teaspoon peppermint extract
  • 1 egg
  • 10 drops green gel food color
  • 1.5 cup semi-sweet chocolate chips
