Copycat Cracker Barrel Coca Cola Cake

Cracker Barrel restaurants are known for its comfort-food and Southern-inspired dishes. There are so many great menu-items to choose from, and there is something for everyone there!

The Double Chocolate Fudge Coca-Cola Cake frequently makes the top choice list for many who dine at Cracker Barrel. Now you can make a homemade version of this delicious recipe for a dessert that’s sure to win-over your dinner guests!

Using Coca Cola to Bake

If you’ve never used Coca Cola to bake soda cakes, the idea might sound kind of strange to you. But I promise, this key ingredient is a game-changer!

Coca Cola is often used in marinades, sauces, and brines, but it’s the chemical properties that make it great to bake with, rather than its taste. The acidic ingredients in Coca Cola mix with baking soda to produce tiny air bubbles that helps the cake rise and creates a moist, fluffy texture.

How to Make This Cracker Barrel Copycat Recipe

This easy recipe will yield about 12 square cake pieces of chocolatey cake, topped with homemade frosting. Let’s get started!

First, let’s get your oven preheated to 350 degrees Fahrenheit. In a mixing bowl, combine flour and sugar, then set aside.

Next, combine butter, oil, coca cola and coca powder in a medium saucepan and heat over medium heat. Let the mixture melt and come to a boil, stirring constantly.

Once this is boiling, remove the pan from heat and add this to the sugar and flour mixture. Stir together, combining thoroughly.

Add the eggs, buttermilk, vanilla, salt and baking soda to this mixture, and whisk together for another minute until combined.

Pour batter into a 9×11 inch baking pan sprayed with baking spray or coated in oil and flour. Spread evenly in the prepared pan, then bake for 30 minutes or until a toothpick inserted in the center of the cake comes out clean.

Let the hot cake cool for about 5-10 minutes while you make the frosting (the best part, in my opinion!).

To make the frosting, first prep the powdered sugar by measuring it out into a large bowl. Set is aside for a moment.

Then, heat the cocoa powder, butter, salt and coca cola in a small saucepan over medium heat. Whisk continuously until it begins to steam, but before it boils.

Pour this melted mixture into the bowl that has the powdered sugar in it, and mix together until combined.

Poke holes with a toothpick all over the cooling chocolate cake to allow some of the fudgy icing to seep into the cake when coated.

Coca Cola Cake Tips

Make sure you do not substitute Diet Cola in this recipe! You will want the sugars from the real deal to truly make this recipe divine.

You can store your cake at room temperature for about 3 days. For best results, place leftovers in an airtight container or cover the pan with plastic wrap.
