Perfect Cookie Sandwich for Any Brownie Lover

One of my favorite places to go for a treat when I was younger was the cookie shop at the local mall. My eyes were often bigger than my stomach, so I typically chose the big cookie sandwich: 2 cookies, filled with frosting.

If you can make cookies and frosting, you can make a version of this at home – it’s super easy! And I’m going to share with you my favorite brownie cookie recipe and homemade chocolate buttercream that pair perfectly for this delicious dessert.

It’s a recipe that’s sure to please when you bring it to any get-together, or impress your kids when you whip it up on a random weeknight. Just make sure you have some napkins handy!

Ingredients for Chewy Brownie Cookies

You’ll need to gather 1-2 large rimmed baking sheets, and I also highly recommend some silicone baking mats and a cookie scoop. These are great tools to have on hand for any and all cookie baking!

Here’s what you’ll need to make the cookies:

  • 2 cups all purpose flour
  • ¾ cup unsweetened cocoa
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 ¼ cups butter, room temperature
  • 2 cups sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract

Homemade Chocolate Buttercream Frosting

When making cookie sandwiches, you definitely don’t want a frosting that is too soft or runny. This is the best recipe to use for the added chocolatey goodness in this dessert. You’ll need:

  • 1 cup powdered sugar, spooned
  • ¼ cup unsweetened cocoa powder 
  • 1 ¼ cups butter, room temperature
  • ¼ teaspoon vanilla extract
  • Pinch salt
  • Sprinkles, optional

How to Make Brownie Sandwich Cookies

First, preheat your oven to 350 degrees and prepare your large rimmed baking sheets with parchment paper or silicone baking mats. In a medium bowl, whisk together the flour, cocoa, baking soda, and salt. Set aside.

In a large bowl, beat the butter and sugar on medium speed until fluffy, about 6 minutes. Add in the eggs and vanilla, mixing until incorporated and creamy (scrape down sides as needed!).

Add the flour mixture to the batter and beat just until blended.

Using a medium cookie scoop, drop the batter onto the prepared cookie sheet about 2 inches apart.

Bake the cookies for 10 to 12 minutes or until set on the sides and slightly crinkled across the top. Let the cookies cool completely on the baking sheets or a wire rack before assembling!

Assembling the Sandwich Cookies

Once the cookies are cool, beat the ingredients for the filling together until creamy. Transfer the filling into a piping bag, and pipe the filling onto the flat side of a cookie. Place another cookie on top, twisting slightly to spread the filling to the edge.

Refrigerate the cookies until the filling is set – then enjoy! Store remaining cookies in an airtight container in the refrigerator.
